Tasting notes :
This clear gold colour Cognac has fruity scents, both light and nervous.
In order to elaborate our VSOP, we blend 50 % Petite and 50 % Grande Champagne (it's Fine Champagne), from our Arthenac and Lignières-Sonneville vineyards, respectively.
Eaux-de-vie are kept in new French oak casks during 6 to 8 months. This Cognac continues its ageing in older oak casks, protected from light.
Two years later, the first blendings are done in order to bring Cognac to 40 % ABV. These blendings are made in three times, and each lasts around 2 to 3 years. Cognac is then filtered and bottled. Finally, VSOP Cognac has to be at least 10 years old.
Fine Champagne Cognac are quite rare, since it's necessary to have a vineyard in the two main Cognac crus.
Serving suggestions :
Nice for cocktail and long drink, it's also usable for cooking or for a hot toddy (grog). Our VSOP Cognac is nice on the rocks or dry, eventually with a cigar.
